Planning Out Easter Dinner Today

So today I thought I would start to plan Easter Dinner. I am sure I will tweak some things from not until next week but so far this is what I came up with. What's on YOUR menu?

  • Garden Salad

  • Crostini with Herbed Goat Cheese, honey, and Walnuts

  • Glazed Spiral Ham

  • Quinoa and Herb Crusted Lamb Chops sauce that has 1 cup of cream Fraiche, 1 tablespoon of maple syrup, 1 tablespoon of fresh thyme and seasoned w/salt and pepper, mix and serve along side lamb.

    • Roasted Asparagus

  • Roasted Herbed Potatoes (parsley, dill, rosemary, sea salt, pepper and EVOO)

    • Roasted Green Beans (just EVOO and Sea Salt)

    • Roasted Carrots
  • Traditional Southern Deviled Eggs

  • Orzo w//Smoky Tomato Vinaigrette

  • Eggplant and Asparagus Napoleons

  • Dessert: (homemade of course) 
    • Carrot Cake ( I personally won't enjoy baking this but WILL enjoy eating it;)
    •  Chocolate Cake

      Your Easter dinner sounds really delicious!

      I'm making a ham but I love leg of lamb. That's one of my favorites.... just not my families.


    2. I know, funny Richard requested it. I don't eat it though either....I'll "try" some:)

      I scratched those polenta chocolate cake squares for an easy and less fattening one from Ina:)
