I had to say I was impressed with my carrot cake as well, not often I bake and I think it turned out pretty and it taste great but I did make a better one a few years back...just could not find that recipe for the life of me!!! The other one was four layers and at citrus flavors inside like orange and lemon. This was Paoul Deen's Recipe.
